Best Berry cheesecake
This no-bake cheesecake in a glass is so quick and easy and it’s one of those desserts that would never fail to impress your guests.
You will need:
For the crust:
- 125g of digestive biscuits
- 40 g of melted butter
For the Filling
- 400g of cream cheese
- 400g of fresh cream
- 5 tablespoon of sugar
- 2g of gelatine
- 1 teaspoon of vanilla extract
- berry compote for topping
How to do it:
Put the biscuits in a food processor and pulse until they are finely ground.
Mix the cookie crumbs and melted butter until moist crumbs form.
Spoon some crumbs into each glass and press gently with the back of a spoon or fingertips.
Make sure it is spread out evenly. Don’t press too much you don’t want to have strong hard bottom
Put the glasses in the refrigerator while the rest of the cheesecake is prepared.
Take a medium pot, pour the cream into it, add the cheese and sugar put on the burner and gently whisk until boiling point, turn off the burner, add the vanilla extract and gelatin, mix until the gelatin dissolves, cool to room temperature and pour into glasses, put in the fridge to thicken.
Top with berries before serving. Enjoy!
