Pasta Tagliatelle with meatballs recipe

The trick to these meatballs is to keep them small. Don’t actually use a teaspoon, but use about a teaspoon’s amount of mince to roll each ball. If there are children around, so much the better; they tend to like making these. But otherwise, they’re easy enough, and the slow repetitiveness of the action can be rather calming.

You will need:

  • 250 grams minced beef
  • 1 large egg
  • 2 tablespoons freshly grated parmesan
  • 1 clove garlic (minced)
  • 1 teaspoon dried oregano and
  • 1 small bunch of parsley
  • 3 tablespoons breadcrumbs
  • good grinding black pepper
  • 1 teaspoon salt
  • 250 ml of Home-made tomatoes sauce
  • pre-cooked pasta tagliatelle

How to do it:

First you need the sauce you can find it how to do it in this article Home-made tomatoes sauce recipe.

Next, make the meatballs. In a large bowl, mix well the minced beef, Parmesan cheese, garlic, egg, dry breadcrumbs, parsley, oregano and season with salt and pepper, use your hands to shape 15-17 meatballs.

Heat the olive oil in a frying pan over medium-low heat, add the meatballs and cook, shaking the pan occasionally, for 4-5 minutes or until browned all over, you want to have nice color. Heat the sauce and stir the meatballs into the pan. Cover and simmer, over medium heat, for a further 10 minutes, until the sauce has thickened and the meatballs are cooked through.

While the meatballs cook, bring a large pan of salted water to the boil and cook the tagliatelle for 2-3 minutes until al dente. Drain and serve with the tomato meatballs, sprinkled with parsley and extra Parmesan.
